depends how mad you want to go, you can go with fibreglass or carbon fibre panels such as bootlids, doors, roof, boot floor and front-end or you could go crazy and re-shell it in an entire fibreglass shell.
Standard mini weighed anything from 617kg to 686kg depending on what year engine size and transmission type you had.

polycarbonate windows (windscreen has to be glass for MOT), remove the rear bench, rear bins, carbon fibre or fibreglass seats, remove the rear subframe and use a TDK beam or similar, billet aluminium radius arms aswell as anything else billet or cast aluminium like front and rear hubs, wheel choice can save you quite alot too, force racing or minispeed make some super lightweight wheels.
have been doing a bit of research recently to try and find out the best ways I can lose weight without going too mad, aiming to get the car too 650kg or less including a roll cage, but at the same time I want it to be useable so I've scrapped the idea of fibreglass doors as they flex at speed, the mini door co. does streetfighter doors made with aluminium which are more useable but dent easily.
I'm sure there is alot more to consider but as I said it depends on how mad you want to go and what your using it for and if its going to be on the road, how useabe you want it to be.
